Gazpacho Soup

There are numerous variations of this chilled, tomato-based soup from Spain. Originally, it was a peasant dish that made use of the three basic ingredients much revered in Spain, oil, water and bread and other ingredients were added according to what was available. Ingredients:
1 large sweet Spanish onion, finely chopped

4 tablespoons white wine vinegar

1 large green pepper, peeled with a vegetable peeler and coarsely chopped
3 slices country-style bread, with crusts, about 100 g
3 garlic cloves, crushed
2.5 kg ripe tomatoes, skinned
12 cm cucumber, peeled and coarsely chopped
6 tablespoons extra virgin olive oil
fine sea salt
a splash of Tabasco (optional)
ice (optional)
GARNISHES
6 cm cucumber, unpeeled, finely chopped
1 cm bread croutons, sauteed in olive oil infused with garlic
2 ripe tomatoes, finely chopped

Directions:
Put 1/4 of the chopped onion in a small bowl and add 1/4 teaspoon of the sugar, 1/2 teaspoon of the vinegar, and 3 tablespoons cold water and set aside. Reserve one-quarter of the prepared red and green peppers and put in small bowls. These small bowls will be served as garnishes at the end.

To make the other garnishes, put the unpeeled, chopped cucumber, croutons, and chopped tomatoes in separate small bowls and set aside.

To make the gazpacho, put the bread, garlic, and remaining sugar in a flat dish, sprinkle with the remaining vinegar and 250 ml cold water, and let soak.

Cut the skinned tomatoes in half and cut out the hard core. Put a sieve over a bowl and deseed the tomatoes into the sieve. Push the seeds with a ladle to extract all the juices. Put the juices in a blender and discard the seeds. Add the soaked bread mixture and half the tomatoes. Blend until smooth and pour into a bowl.

Put the remaining tomatoes, the remaining onion, and 100 ml iced water in the blender. Pulse 8 times to get a medium chunky effect, then pour into the bowl. Put the remaining chopped peppers, coarsely chopped cucumber, olive oil, salt and 150 ml iced water in the blender and pulse 8 times. Add to the bowl and stir in Tabasco, if using. Chill for up to 2 hours.If you like ice added, serve with crushed ice cubes. Put the bowls of garnishes on the table for guests to sprinkle over gazpacho.

150 grams plain flour
25 grams of ground rice
125 grams of diced butter
50 grams of caster sugar
One tablespoon of lavender petals

To decorate:
250 grams of strawberries
150 millilitres of double cream
16 small lavender flowers

Place the ground rice and the flour into a mixing bowl or alternatively, use a food processor. Next, add the butter and rub it in using your fingertips until the mixture starts to resemble fine breadcrumbs.
Next, stir in the lavender petals and sugar and squeeze the crumbs together to form a smooth ball. Knead the mixture lightly and then roll out onto a lightly floured surface until it is 5mm thick. Stamp out 7.5cm circles using a round biscuit cutter. Move the mixture to an ungreased baking sheet and reknead the trimmings, continuing to roll and stamp out until you have created 16 biscuits.
Prick with a fork and bake in a preheated oven at 325 degrees fahrenheit for around twelve minutes until it is a golden colour. Then, leave it to cool on the baking tray.
For serving, halve four of the strawberries, and slice the rest of them. Whip up the cream and spoon it over eight of the biscuits. Next, top with the sliced strawberries and then onto the remaining biscuits. Spoon the rest of the cream on top and decorate with the reserved halved strawberries and sprigs of lavender. Dust lightly with the icing sugar. They are best eaten on the same day that they are filled, but the plain biscuits can be stored for up to three days in an airtight tin.
This dessert should feed up to eight people, the preparation time is around half an hour and the cooking time is up to twelve minutes.

  • 1/4 cup water




  • 1 cup milk (regular, low-fat, or fat-free)




  • Grated nutmeg for garnish





  • Directions:

    1. Melt 2 tablespoons butter in a large saucepan over low heat. Add the leeks, reduce the heat even further, and cook very slowly, stirring occasionally, until quite soft but not at all browned, about 10 minutes. Should the leeks begin to brown, remove the pan from the heat; let it cool off, stirring constantly; then reduce the heat even further before continuing.

    2. Add the remaining 1 tablespoon butter and stir until melted. Sprinkle the flour over the leeks, count to ten, then whisk over the heat for 1 minute, taking care not to let the flour brown.

    3. Raise the heat to medium and whisk in the broth in a slow, steady steam. Continue whisking constantly until the mixture thickens and comes to a simmer.

    4. Set 1/2 cup peas aside. Reduce the heat to low and add the remaining peas to the soup along with the bay leaf, salt, and pepper. Simmer very slowly, stirring occasionally, until the peas are quite tender, about 12 minutes.

    5. Meanwhile, bring the water to a boil in a small saucepan set over high heat. Add the reserved peas, reduce the heat to low, and cook for 30 seconds. Drain in a colander set in the sink.

    6. Remove the bay leaf from the large saucepan. Pour the mixture into a large food processor fitted with the chopping blade or into the canister of a large blender. Process or blend until smooth, scraping down the bowl or canister as need be to make sure everything is incorporated. Pour the puree back into the saucepan. Alternatively, use an immersion blender right in the pan to puree the soup.

    7. Working over low heat, slowly whisk in the milk and bring the soup to the first bubble, just warmed through; then remove it from the heat to avoid a "cooked milk" taste. Check to see if the soup needs more salt. Ladle into bowls, dot the fresh peas over each serving, and sprinkle with a little grated nutmeg.

    Variations:
    Substitute almond oil or canola oil for the butter. For a richer soup, substitute half and-half or evaporated milk for the milk. Fry up 3 or 4 slices of bacon, turkey bacon, or soy bacon until crisp; crumble over the soup in the bowls. (In this case, add no extra salt because of the bacon.)

    Crab and Pea Soup:
    Mound a little lump crabmeat, picked over for shell and cartilage, in the middle of each bowl before ladling in the soup.

    Herbed Pea Soup:
    Add 3 parsley sprigs, 2 oregano sprigs, and 2 thyme sprigs with the bay leaf; remove them with the bay leaf before you puree the soup.

    Ingredients:

    500 gm chicken breasts, cut in half to make less thick, and then cut into thin strips
    ½ Tbsp grated ginger
    2 Tbsp cornstarch
    1 Tbsp rice wine
    ½ Tbsp soy sauce
    1 ½ Tbsp cooking oil
    1 tsp sesame oil
    1 ½ Tbsp chopped shallots
    ½ Tbsp minced garlic
    2 Tbsp black bean and garlic sauce (available in supermarket)
    ½ cup chicken stock
    1 ½ tsp sugar
    1 cup (80 gm) snow peas
    ½ cup shiitake or oyster mushrooms, sliced into strips


    Procedure:
    Combine the chicken with ginger, cornstarch mixture and soy sauce. Leave to marinate for 10 minutes.

    Heat cooking oil and sesame oil in a wok over high heat.  Sauté shallots and garlic for 30 seconds or until fragrant.  Add black bean sauce and stir-fry for another 30 seconds.

    Add chicken and let cook. Add chicken stock and sugar. Bring to a boil. Reduce the heat to low and simmer for 3 minutes. Add the snow peas and mushrooms and cook for another 2 minutes or until vegetables are tender.  (optional ) Add some red pepper flakes, or some chili garlic sauce to give the dish a little spicy.
    Makes 3-4 servings.

    3. Bring a saucepan of slightly salted water to the boil then turn the heat off, add the pasta to the pan (one or two handfuls per person), cover with a lid and leave to stand while you make the quick sauce.

    4. Sift 2 tablespoons of flour into the pan with the fried mushrooms and onions, stir well and cook for about a minute.

    5. Gradually pour the milk into the pan, stirring all the time, then turn the heat up and cook for a couple more minutes until you have a smooth, fairly thin sauce (whisk any lumps out with a fork or a small hand whisk). Season the sauce with black pepper.

    6. Drain the pasta and transfer to a large ovenproof dish with the chorizo. Pour over the sauce and mix everything together thoroughly.

    7. Sprinkle with plenty of grated cheese and bake in the oven on Gas Mark 4 (180ºC) for 15-20 minutes.

    Chicken Curry - A Caribbean Recipe

    There's nothing nicer on a cold winter's night than a warming chicken curry. Many of us turn to Indian recipes for our chicken curry but here's a Caribbean recipe or two, just for a change.
    Actually here are a couple of different methods for making your own Caribbean chicken curry.

    Recipe 1
    Ingredients
    1 whole chicken
    1 large onion, peeled and chopped
    Vegetable oil for frying
    1 tbsp hot curry powder
    1.5cm root ginger
    1 cloves garlic
    Salt and black pepper
    ½ tsp cayenne pepper
    3 potatoes, peeled and cut into chunks

    Method
    First wash and skin the chicken then cut into joints, then cut each joint into two or three pieces depending on size.
    Next, heat the oil in a large saucepan and fry the onion until golden.
    Peel and chop the root ginger and the garlic then grind to a paste, using a little water if necessary and add to the onions, continuing to fry for a minute or so.
    Add the curry powder, cayenne and salt and pepper to taste. Stir a fry for a minute or two then gradually add about 200ml water. Don't add too much at this stage.
    Put the chicken into the pot and stir. Cover and simmer until nearly tender (about 15 minutes), adding water if necessary then add the potatoes, cover once again and cook until the potatoes are done (about another 15 minutes).
    This next recipe is a bit spicier than the last so choose whichever one suits your palate the best.

    Recipe 2
    Ingredients
    1 whole chicken
    Lemon or lime juice
    1 onion, peeled and finely chopped
    3 spring onions, finely chopped
    4 cloves garlic, peeled and crushed
    2 hot chillies such as Scotch Bonnet
    6 tbsp Jamaican curry powder
    5 sprigs fresh thyme or 1 tsp dried thyme
    Salt and black pepper to taste
    1.5 tbsp vegetable oil
    2 potatoes, peeled and cut into small pieces

    Method
    Rub the lemon or lime juice all over the chicken then chop it into small pieces.
    Combine, the chopped onion, spring onions, chillies and the crushed garlic in a bowl and add the curry powder, thyme, salt, pepper and oil, stir well and mix in the chicken pieces. Cover and leave to marinate in the fridge for at least two hours or overnight.
    Brown the chicken in some more vegetable oil, add the potatoes and some water and leave to stew on a very low heat for about an hour. Top up the water if necessary.
    Traditionally, Caribbean chicken curry is served with rice and peas.

    1. A small pot
    2. 1.5 cups of water
    3. 2 cups of uncooked rice
    Step 1.
    Soak the uncooked rice in cold water. Add in water until the rice isn't visible--just enough water to coat it. Leave it to rest for about 1 hour. After an hour, rinse the rice repeatedly 4-5 times until the water starts to become clear. Run your hands across them, and make sure to drain the water after rinsing.
    Step 2.
    Add 2 cups of washed-uncooked rice in the pot. Proceed to add 1.5 cups of water. The water should cover the rice about 1 inch from the surface of the rice. Then, set the stove to a high setting, and then leave it alone for 8 minutes, or until most of the water in the pot has evaporated.
    Step 3.
    Once the water is almost all gone, set the stove to the lowest setting. Cover the pot with a lid and leave it be for about 10 minutes. This process will allow the rice to be evenly steamed. After 10 minutes, turn off the heat, and then let the pot rest for an additional 2 minutes. The time may vary slightly depending on the size of your pot. At the 10 minute mark, simply run your spoon to see if it needs more time. Add in a few minutes depending on the state of your rice.

    Rice is complete! If you followed this procedure correctly, you should be able to cook perfect rice every time. Having a good foundation in rice cooking is essential in Korean cuisine.
